Butternut Squash
Butternut squash is a Superfood for your eyes because one serving (1 cup, 140g) is a top source of vitamin A (providing approximately 300% of the Daily Value), a nutrient that helps maintain eye health. Studies show vitamin A helps the eye to adapt from bright light to darkness, while inadequate intake can lead to night blindness and poor vision in dim light. Also, according to the scientific panel at the Institute of Medicine, observational studies have reported that carotenoids (vitamin A precursors in butternut squash) seem to lower the risk of age-related macular degeneration (AMD). One study found a 43% lower risk of AMD in people whose intake of carotenoids was highest versus lowest.
