Ingredients

  • 1 package (3 oz.) cream cheese, softened
  • 3/4 cup margarine, softened
  • 3/4 teaspoon salt
  • 1-3/4 cups all-purpose flour
  • 1 egg
  • 2/3 cup packed brown sugar
  • 1 cup finely chopped fresh DOLE® Tropical Gold® Pineapple
  • 2 squares (1 oz. each) semi-sweet chocolate, grated
  • 1 tablespoon grated orange peel
  • 1/2 teaspoon vanilla extract

Directions

  1. Beat cream cheese, margarine and salt, in medium bowl, until light and fluffy. Blend in flour until dough forms into a ball. Divide dough into thirds; then divide each section into 12 balls. Press each ball into bottom and sides of mini muffin pans to form tart shell.
  2. Beat egg with brown sugar in medium bowl. Stir in pineapple, chocolate, orange peel and vanilla. Evenly spoon filling into tart pans.
  3. Bake at 350øF., 25 to 30 minutes or until crust is golden and filling is set. Cool 15 minutes. Carefully remove tarts from pans. Cool on wire racks.
