Ingredients

  • 1 can (20 oz.) DOLE® Pineapple Chunks, undrained
  • 2 tablespoons Dijon-style mustard
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons soy sauce
  • 3 tablespoons lime juice
  • Dash cayenne pepper
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons fat-free mayonnaise
  • 4 cups DOLE Angel Hair Slaw
  • 1/2 cup finely chopped DOLE Green Onions

Directions

  1. Combine pineapple and mustard in large non-stick skillet. Bring to a boil over medium-high heat and cook until juice becomes slightly sticky. Add shrimp and cook just done, about 5 minutes. Remove from heat and keep warm.

  2. Combine soy sauce, lime juice, cayenne, ginger and mayonnaise until well blended in small bowl. Pour slaw and scallions in another large skillet over medium heat and toss 2 to 3 minutes, to heat. Pour dressing over slaw and toss to coat. Transfer to dish and top with pineapple dijon shrimp. Garnish with additional green onions, if desired.
