Peas belong to the legume family and provide one of the highest vegetable sources of protein. One-half cup of cooked peas (80g) provides an excellent source of vitamin K and manganese, plus a good source of fiber, vitamin C, folate, vitamin A, and thiamin for just 67 calories. Peas also supply a significant quantity of the eye-healthy phytochemicalsbeta-carotene, lutein, and zeaxanthin.

Peas can be stored in the refrigerated in a perforated plastic bag for up to five days. Do not shell peas until you are ready to use them.
Remove peas and discard pod.
Look for bright green, firm pods. Avoid pods with brown spots or wilting
